Glycemic Index, Glycemic Load, and Cereal Fiber Intake and Risk of Type 2 Diabetes in US Black Women

This study utilized data from the Black Women’s Health Study, which involves 59,000 U.S. African-American women.  Diet patterns were assessed at baseline, and the women were followed for eight years.  The researchers found that the risk for diabetes was reduced in women who ate a diet that was high in cereal fiber, and this was evident among both overweight women and those who were not overweight.  The researchers concluded that changes as simple as switching from white bread to whole grain bread, or substituting bran cereal or oatmeal for low fiber breakfast foods could provide a 10% reduction in diabetes risk.
